Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with a paper towel. Set aside.

Mix the Dry Ingredients
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk until well combined.

Add Water
Gradually add the cold water to the dry mixture while whisking, until you achieve a smooth batter. It should be thick enough to coat the shrimp.
Frying

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

Coat the Shrimp
Dip each shrimp into the batter, ensuring it is well coated.

Fry the Shrimp
Carefully place the battered shrimp into the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and crispy.

Drain and Serve
Remove the fried shrimp from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot.
