Preparation

    Cook the Noodles

    Bring 4 cups of water to a boil in a large pot. Add the saimin noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    While the noodles are cooking, chop the green onions, julienne the carrots, and shred the cabbage. Set aside.

    Prepare the Shrimp

    If using frozen shrimp, make sure they are thawed and peeled. Pat dry with paper towels.

Cooking

    Fry the Shrimp

    In a large skillet or wok, heat 1 cup of vegetable oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp and set aside.

    Scramble the Eggs

    In the same skillet, crack the eggs and scramble them until fully cooked. Remove and set aside with the shrimp.

    Stir-Fry the Vegetables

    Add a little more oil if necessary, then add the chopped green onions, julienned carrots, and shredded cabbage. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

    Combine Ingredients

    Add the cooked saimin noodles to the skillet along with the cooked shrimp and scrambled eggs. Pour in the soy sauce, sesame oil, salt, and black pepper. Toss everything together and cook for another 2-3 minutes to heat through.

Serving

    Remove from heat and serve hot. Garnish with additional chopped green onions if desired.
