Preparation of Tacos

Prepare Ahi Tuna
Season the Ahi tuna fillets with salt and pepper on both sides. You can grill or fry them according to your preference.

Cook Ahi Tuna
If grilling, preheat the grill to medium-high heat. Grill the tuna for 2-3 minutes on each side until cooked to your liking. If frying, heat a non-stick skillet over medium heat with a little oil and cook for 2-3 minutes on each side until golden brown.

Prepare Tortillas
Warm the flour tortillas in a skillet over low heat for about 30 seconds on each side until soft and pliable.

Assemble Tacos
On each tortilla, layer the shredded cabbage, cooked Ahi tuna, a drizzle of spicy aioli, a dollop of guacamole, and a spoonful of salsa.

Cut Potatoes
Peel the potatoes and cut them into thin strips to resemble fries.

Heat Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can check the temperature by dropping in a small piece of potato; if it sizzles, it's ready.

Fry Potatoes
Carefully add the potato strips to the hot oil in batches, avoiding overcrowding. Fry until golden brown and crispy, about 4-5 minutes. Use a slotted spoon to remove them and drain on paper towels.

Season Fries
Immediately sprinkle the fries with salt while they are still hot.
