Fries Preparation

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin fries, around 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch.

Heat the Oil
In a deep fryer or a large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked fries and pat them dry. Fry them in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels. Season with salt while hot.

Prepare the Ahi
Season the Ahi tuna fillets with salt and pepper on both sides.

Make Tempura Batter
In a mixing bowl, combine the tempura batter mix with cold water according to the package instructions to achieve a smooth batter.

Bread the Fish
Dip each Ahi fillet into the tempura batter, allowing excess batter to drip off. Then coat the fillet with panko breadcrumbs, pressing gently to adhere.

Fry the Fish
In a separate frying pan, heat vegetable oil over medium-high heat. Carefully add the breaded Ahi fillets and fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

On a serving plate, arrange the crispy fries alongside the tempura Ahi fillets.

Serve with lemon wedges and a side of tartar sauce for dipping.
