Prepare Egg Yolks

    Sous Vide Cooking

    Set your sous vide precision cooker to 65°C (149°F). In a bowl, gently whisk together the egg yolks, salt, and black pepper until well combined. Pour the mixture into a sous vide bag and seal it using the water displacement method. Cook in the water bath for 45 minutes.

Toast the Bread

    Toasting Process

    While the egg yolks are cooking, heat a skillet over medium heat. Add the butter and let it melt. Once melted, add the Japanese bread slices and toast them until they are golden brown on both sides, approximately 3-4 minutes per side. Remove from the skillet and set aside.

Prepare Toppings

    Cured Egg Yolk Preparation

    If you don't have pre-made cured egg yolk, you can make it by covering raw egg yolks in a mixture of salt and sugar for 3-4 days in the refrigerator. Once ready, take the cured yolk and carefully shave it using a microplane or grater.

Assemble the Toast

    Final Assembly

    Once the sous vide egg yolks are done, carefully remove them from the bag and place one yolk on each slice of toasted Japanese bread. Top each yolk with fresh salmon roe and a generous sprinkle of the cured egg yolk shavings. Serve immediately.
