Method

Pork Preparation

  1. 1

    Prepare the Pork

Start by trimming excess fat from the pork shoulder. This will help it smoke better and not be overly greasy.

  2. 2

    Season the Pork

Rub the pork shoulder with Hawaiian sea salt, black pepper, garlic powder, and liquid smoke. Ensure the entire surface is evenly coated.

  3. 3

    Let it Marinate

Cover the seasoned pork shoulder with plastic wrap and let it marinate in the refrigerator for at least 12 hours, preferably overnight.

  4. 4

    Smoke the Pork

Preheat your smoker to 225°F (107°C). Place the pork shoulder in the smoker and smoke it for about 8 hours, or until the internal temperature reaches 195°F (90°C).

  5. 5

    Rest the Pork

Once done, remove the pork from the smoker and let it rest for at least 30 minutes before shredding.

Serving

  1. 6

    Prepare the Rolls and Coleslaw

While the pork is resting, prepare Hawaiian sweet rolls and coleslaw mix in a large bowl. Toss the coleslaw mix with your favorite dressing.

  2. 7

    Assemble the Sandwiches

Shred the smoked pork and pile it onto the Hawaiian sweet rolls. Drizzle with BBQ sauce and top with coleslaw.

  3. 8

    Serve

Serve the Double Loco Kalua Smoked Pork sandwiches warm and enjoy!
