In a mixing bowl, combine the ground beef, salt, and black pepper. Form the mixture into two equal patties.

Cook the Patties
In the same skillet, using the bacon grease, cook the beef patties over medium-high heat for about 3-4 minutes on each side. Top each patty with a slice of cheddar cheese during the last minute of cooking to melt the cheese.

Toast the burger buns lightly. Place a cooked patty on the bottom half of each bun, add bacon, lettuce, tomato, onion, and pickles. Top with the other half of the bun.
