Method
Miso Soup

Make Dashi Stock
Prepare the dashi stock by bringing 4 cups of water to a boil. Add in kombu and bonito flakes, then simmer for 10 minutes. Strain and keep the clear stock.

Simmer Stock
In a pot, add the dashi stock and bring it to a gentle simmer.

Mix Miso
Add the miso paste into a small bowl, and add a ladle of hot dashi stock to it. Whisk until smooth, then add it back to the pot of dashi.

Add Tofu and Seaweed
Add cubed tofu and rehydrated seaweed to the pot. Simmer gently for 5 minutes.

Finish Soup
Just before serving, stir in the chopped scallions.
Green Salad

Prepare Salad Base
In a large bowl, combine the mixed greens, sliced cucumber, halved cherry tomatoes, and grated carrot.

Dress the Salad
Drizzle with Japanese sesame dressing and toss gently to coat all ingredients.
Rice with Furikake

Rinse Rice
Rinse the short-grain rice under cold water until the water runs clear. Drain well.

Cook Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then cover and simmer on low for 20 minutes.

Season Rice
Once cooked, fluff the rice with a fork and sprinkle furikake seasoning on top before serving.
