Prepare Sushi Rice

Rinse Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming too sticky.

Cook Rice
In a rice cooker or pot, combine the rinsed sushi rice and 1.5 cups of water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the water is absorbed.

Season Rice
Once cooked, remove the rice from heat and let it sit covered for 10 minutes. Then, transfer the rice to a large bowl and mix in the rice vinegar, sugar, and salt while the rice is still warm. Use a wooden spoon to fold the rice gently without crushing the grains.

Cut Daikon
Peel the daikon radish and cut it into thin, long strips, about 1/4 inch thick. These strips will serve as the filling for the hosomaki.

Prepare Nori
Lay a sheet of nori on a bamboo sushi mat, shiny side down.

Wet your hands to prevent sticking, and take a handful of sushi rice (about 1/2 cup). Spread it evenly over the nori, leaving about 1 inch of space at the top.

Place a few strips of daikon radish across the center of the rice-covered nori. Add a small amount of wasabi if desired.

Roll Sushi
Using the bamboo mat, carefully roll the nori away from you, applying gentle pressure to form a tight roll. Continue rolling until you reach the bare edge of the nori.

Seal and Slice
Moisten the edge of the nori with a little water to seal the roll. Use a sharp knife to slice the roll into 6 equal pieces. Wipe the knife between cuts for clean slices.
