Method

Preparation of Rice

    Rinse the Rice

    In a bowl, rinse the Japanese short-grain rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or a pot, combine the rinsed rice and water. Cook according to the rice cooker instructions, or bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes. Let it sit covered for 10 minutes before fluffing with a fork.

Cooking Protein Choices

    Prepare Beef Teriyaki

    Slice beef into thin strips. In a bowl, mix soy sauce, mirin, sugar, and black pepper. Marinate beef in the mixture for 30 minutes. Grill or stir-fry until cooked through.

    Cook Chicken Katsu

    Pound chicken breasts until even in thickness. Dredge in flour, dip in beaten eggs, then coat with panko breadcrumbs. Deep-fry in hot oil until golden brown and cooked through.

    Make Sesame Chicken

    Cut chicken into bite-sized pieces. In a bowl, mix soy sauce, sesame oil, and a bit of sugar. Stir-fry chicken until cooked, then add sesame seeds to coat.

    Prepare Tonkatsu

    Follow the same steps as Chicken Katsu, using pork cutlets instead. Serve with tonkatsu sauce.

    Cook Salmon

    Season salmon fillets with salt and pepper. Grill or pan-sear skin side down until cooked and flaky, about 6-8 minutes.

    Sauté Squid

    Clean and slice squid into rings. Heat sesame oil in a pan and sauté squid for about 2-3 minutes until opaque.

    Prepare Eggplant

    Slice eggplant into rounds and sprinkle with salt. Let sit for 30 minutes, then rinse. Sauté in olive oil until golden and tender.

    Cook Saba

    Grill or pan-sear the saba until cooked through, seasoning with salt.

    Prepare Ahi

    Sear ahi tuna steaks in a hot pan for 1-2 minutes on each side, leaving the center rare. Season with salt and pepper.

Assembly and Serving

    Assemble Bento Box

    In a bento box or plate, place a portion of rice at one side. Arrange your choice of two proteins, some steamed broccoli, and a small amount of pickled ginger on the other side.

    Final Touch

    Drizzle soy sauce over the proteins and sprinkle sesame seeds on top for garnish. Serve with chopsticks and enjoy!
