Preparing Tempura

    Make the Tempura Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in ice water until the batter is smooth and slightly lumpy. Set aside.

    Prepare Shrimp and Vegetables

    In a separate bowl, toss the shrimp, carrot, zucchini, bell pepper, and broccoli with a pinch of salt. This will enhance the flavor before frying.

Frying Tempura

    Heat the Oil

    In a deep frying pan or wok, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Tempura

    Dunk each piece of shrimp and vegetable into the tempura batter, allowing excess batter to drip off. Carefully add to hot oil, frying a few pieces at a time. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

Cooking Chicken

    Prepare the Chicken

    Season the chicken breasts with soy sauce and sesame oil. If making Katsu, dredge the chicken in flour, dip in beaten egg, and coat with panko breadcrumbs.

    Cook the Chicken

    For Katsu, heat oil in a separate pan and fry until golden brown and cooked through, about 5-7 minutes per side. For Teriyaki, grill or pan-sear the chicken, brushing with teriyaki sauce until cooked through.

    Garnish

    Once cooked, sprinkle sesame seeds on top of the chicken for added flavor.

Serving

    Plate the Dish

    Arrange the tempura shrimp and vegetables on a serving platter alongside the chicken of your choice. Serve with dipping sauce if desired.
