Noodles Preparation

Cook the Noodles
Bring 1 litre of water to a boil in a large pot. Once boiling, add the fresh rice noodles and cook according to package instructions (usually about 3-5 minutes) until they are tender. Stir occasionally to prevent sticking.

Cool the Noodles
Once cooked, drain the noodles in a colander and rinse them under cold water to stop the cooking process. Allow them to drain completely and set aside.

Slice the Vegetables
While the noodles are cooling, wash and prepare the vegetables. Cut the cucumber, carrot, bell pepper, radishes, and green onions into thin julienne strips or matchsticks.
Dipping Sauce Preparation

Mix the Dipping Sauce
In a small bowl, combine soy sauce, sesame oil, rice vinegar, honey (or sugar), minced garlic, and chili flakes. Whisk together until well mixed. Sprinkle sesame seeds on top and set aside.
Assembly

Serve the Dish
On a large serving platter, arrange the cold noodles in the center. Artfully place the sliced vegetables on top or around the noodles. Serve with the dipping sauce on the side in small bowls.
