Prepare the Sushi Rice

Cook the Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Add the rice to a rice cooker with 2 cups of water and cook according to the manufacturer's instructions.

Once the rice is cooked, transfer it to a large bowl. Mix together the rice vinegar, sugar, and salt in a small bowl until dissolved. Pour this mixture over the rice and gently fold it in using a wooden spoon. Allow the rice to cool to room temperature.
Prepare the Poke

Cut the Fish
Using a sharp knife, cut the Farmer Market Ginger Ahi, Wasabi Ahi, Hawaiian-Style Ahi, Spicy Ahi, and Honey-Sesame Salmon into bite-sized cubes.

Marinate the Fish
In separate bowls, combine each poke fish with soy sauce, sesame oil, and sriracha sauce to taste. Mix in chopped green onions and sesame seeds. Allow to marinate in the refrigerator for at least 15 minutes.

Preheat the oven to 400°F (200°C). Cut the sweet potatoes into wedges, toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
