Macaroni Salad or Tossed Salad

Method

Chicken Sticks

    Prepare Chicken

    Cut the boneless chicken breasts into strips, approximately 1 inch wide.

    Set Up Breading Station

    Set up three bowls: one with flour, one with a beaten egg, and one with bread crumbs mixed with salt, pepper, and paprika.

    Bread the Chicken

    Dip each chicken strip first into the flour, then into the egg, and finally coat with bread crumbs. Place on a baking sheet.

    Bake Chicken Sticks

    Drizzle olive oil over the breaded chicken sticks and bake in a preheated oven at 200°C (400°F) for 20-25 minutes or until golden brown and cooked through.

Rice

    Rinse Rice

    Rinse the long-grain white rice under cold water until the water runs clear.

    Cook Rice

    In a medium pot, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until rice is tender and water is absorbed.

Macaroni Salad or Tossed Salad

    Cook Macaroni

    In a large pot, boil water and add elbow macaroni. Cook according to package instructions until al dente, then drain and rinse under cold water.

    Prepare Macaroni Salad

    In a large bowl, combine cooked macaroni, mayonnaise, diced celery, diced bell pepper, and season with salt and pepper. Mix well and refrigerate for at least 30 minutes before serving.

    Prepare Tossed Salad (optional)

    In a bowl, combine mixed greens, cherry tomatoes, olive oil, and lemon juice. Toss gently and season with salt and pepper to taste.
