Preparation

    Prepare the Chicken

    If not already shredded, cook the chicken breasts until fully cooked (internal temperature of 165°F). Allow to cool slightly and shred using two forks.

    Slice the Onion

    Peel the red onion and slice it thinly. Set aside.

    Prepare Garlic Aioli

    In a bowl, combine the mayonnaise, minced garlic (press or finely chop), lemon juice, salt, and black pepper. Stir well until all ingredients are well mixed.

Cooking

    Assemble the Chicken Melt

    In a mixing bowl, combine the shredded chicken and half of the garlic aioli. Mix until the chicken is well coated.

    Build the Sandwich

    On one slice of bread, layer the chicken mixture, followed by a layer of sliced red onions, and top with shredded cheese. Place another slice of bread on top to form a sandwich.

    Grill the Sandwich

    Heat a skillet over medium heat. Add a little butter or oil to the skillet. Once hot, place the sandwich in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Remove from the skillet, slice the sandwich in half, and serve warm with the remaining garlic aioli on the side for dipping.
