Preparing Chicken Katsu

Prepare the Chicken
Season the chicken breasts with salt and black pepper. Dredge each piece in flour, then dip into beaten eggs, and finally coat with panko breadcrumbs.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken and fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Gravy
In a saucepan over medium heat, melt the butter. Stir in flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the chicken broth and soy sauce, continuing to stir until the gravy thickens. Season with black pepper.

Assemble the Plate
On a plate, serve two pieces of chicken katsu alongside two scoops of rice. Pour the brown gravy generously over the chicken and rice. Top with the fried eggs.
