Chicken Katsu

Prepare the Chicken
Season both chicken breasts with salt and black pepper. Tenderize them slightly if desired.

Dredge the Chicken
Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each chicken breast in flour, dip into the eggs, and then coat with panko breadcrumbs.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 4-5 minutes on each side until golden brown and cooked through. Drain on paper towels.

Prepare the Salad
In a large bowl, combine mixed salad greens, halved cherry tomatoes, and sliced cucumber.

Dress the Salad
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper. Drizzle the dressing over the salad and toss gently to combine.

Sauté the Vegetables
In a wok or large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.

If using rice, cook according to package instructions. Alternatively, if using french fries, bake or fry according to package instructions.
