Season the chicken breasts with salt and black pepper on both sides.

Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

Bread the Chicken
Coat each chicken breast first in flour, shaking off excess, then dip in eggs, and finally coat with panko breadcrumbs.

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken and fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.
