    Prepare the Breading

    In a shallow dish, combine the all-purpose flour, salt, black pepper, and paprika. Mix well.

    Dip the Steaks

    In another shallow bowl, whisk together the buttermilk and egg. Dip each cube steak into the buttermilk mixture, then dredge in the seasoned flour until well-coated. Shake off any excess flour.

    Fry the Steaks

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded steaks to the skillet in batches, frying for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Country Gravy

    Create the Roux

    In the same skillet used for the steaks, remove excess oil, leaving about 2 tablespoons. Over medium heat, whisk in the flour until it forms a paste. Cook for about 1-2 minutes until lightly browned.

    Make the Gravy

    Gradually whisk in the milk, stirring constantly to prevent lumps. Continue to cook until the gravy thickens, about 5 minutes. Season with salt and black pepper.

    Cook the Eggs

    In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side-up, over-easy, etc.). Season with salt and black pepper to taste.
