Preparing the Chicken

In a large bowl, combine the chicken thighs, soy sauce, vinegar, minced garlic, bay leaves, and black peppercorns. Ensure the chicken is fully coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for the best flavor.

In a large pot or deep skillet, heat the cooking oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and sear the chicken pieces, skin-side down, until golden brown, about 5-7 minutes. Flip and sear the other side for another 5 minutes.
