Bowl Assembly
Method
Chicken Marinade Preparation
- 1
Marinate the Chicken
In a large bowl, combine the chicken thighs, soy sauce, white vinegar, minced garlic, bay leaves, and black peppercorns. Mix well to coat the chicken evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Cooking the Chicken
- 2
Cook the Chicken
In a large skillet over medium heat, add the marinated chicken along with the marinade. Bring to a simmer and reduce the heat to low. Cover and let cook for about 25-30 minutes, stirring occasionally, until the chicken is tender and cooked through. Remove the lid and increase the heat to medium-high to reduce the sauce for about 5 minutes.

Assemble the Bowls
In serving bowls, place a generous portion of cooked rice as the base. Top with the cooked chicken adobo, spooning some of the sauce over the chicken. Halve the hard-boiled eggs and place them on the side. Garnish with sliced green onions, toasted sesame seeds, and sliced cucumbers. Add chili flakes to taste, if desired.
