Preparing the Fries

Preheat your oven to 425°F (220°C).

Wash and peel the Russet potatoes, then cut them into thin fries (about 1/4 inch thick).

Soak the fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry with a clean towel.

In a large bowl, toss the dried fries with duck fat, salt, and black pepper until evenly coated.

Spread the fries in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
Adding Cheese

While the fries are baking, grate the cheddar and parmesan cheeses.

Once the fries are done, remove them from the oven and sprinkle the grated cheddar and parmesan cheeses generously over the top.

Return the fries to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Garnishing

Finely chop the green onions.

Once the cheesy fries are out of the oven, sprinkle the chopped green onions over the top for added color and flavor.
