Mochi Base

Chocolate Ganache

Method

Mochi Base Preparation

  1. 1

    Mix Dry Ingredients

In a mixing bowl, combine the sweet rice flour, sugar, and cocoa powder. Whisk until evenly blended.

  2. 2

    Add Water

Gradually add the water to the dry ingredients, stirring continuously until a smooth batter forms.

  3. 3

    Steam the Mochi

Pour the batter into a heatproof dish or mochi mold. Steam for about 20 minutes or until the mochi is set and slightly sticky to the touch.

  4. 4

    Cool and Dust

Once done, allow the mochi to cool slightly. Dust a clean surface with cornstarch and turn the mochi out onto it. Dust the top with more cornstarch to prevent sticking.

Chantilly Cream Preparation

  1. 5

    Whip the Cream

In a mixing bowl, pour in the heavy whipping cream. Using an electric mixer, whip on medium speed until soft peaks form.

  2. 6

    Add Sugar and Vanilla

Add the powdered sugar and vanilla extract to the whipped cream. Continue to whip until stiff peaks form. Set aside in the refrigerator.

Chocolate Ganache Preparation

  1. 7

    Heat the Cream

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not boil.

  2. 8

    Combine with Chocolate

Remove from heat and add the chopped dark chocolate to the hot cream. Stir until the chocolate is completely melted and the mixture is smooth.

Assemble the Dessert

  1. 9

    Cut and Fill Mochi

Once the mochi has cooled, cut it into bite-sized pieces. Use your fingers or a knife to create a small pocket in each piece.

  2. 10

    Add Chantilly Cream

Fill each mochi piece with a dollop of Chantilly cream using a piping bag or a spoon.

  3. 11

    Drizzle with Ganache

Drizzle the chocolate ganache over the filled mochi pieces just before serving.
