    Prepare the Chicken

    Cut the boneless, skinless chicken breasts into bite-sized pieces. In a bowl, season the chicken with salt, black pepper, and a tablespoon of soy sauce. Toss well to coat and marinate for at least 15 minutes.

    Prepare the Vegetables

    Chop the red and green bell peppers, and onion into bite-sized pieces. Mince the garlic and ginger.

    Prepare the Sauce

    In a separate bowl, whisk together soy sauce, chicken broth, cornstarch, sugar, and sesame oil until smooth.

    Toast the Cashews

    In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the raw cashews and toast them for about 3-4 minutes, stirring frequently, until they are golden brown. Remove from skillet and set aside.

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the marinated chicken pieces and cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove and set aside.

    Stir-fry the Vegetables

    In the same skillet, add the chopped bell peppers, onion, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

    Combine Chicken and Sauce

    Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.

    Add the toasted cashews back to the skillet, stir to combine, and cook for another minute. Serve the cashew chicken hot over cooked rice or noodles.
