Prepare Sushi Rice

    Rinse Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook Rice

    Combine the rinsed rice and water in a rice cooker and cook according to the rice cooker instructions. If using a pot, bring to a boil, then reduce heat and simmer for 20 minutes.

    Rest Rice

    Once cooked, let the rice sit covered for 10 minutes. Then, transfer to a bowl.

    Season Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the rice and gently fold to combine without mashing the rice.

Prepare Filling

    Slice the cucumber and avocado into thin strips.

    Prepare Crab Mix

    In a bowl, combine crab meat with mayonnaise and mix well.

Assemble Temaki

    Layer the crab mixture, cucumber, and avocado on top of the rice.

    Roll the nori away from you to form a cone shape, tucking in the filling as you roll.
