Prepare Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes.

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture with a spatula. Allow rice to cool to room temperature.

Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat.

Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch from the top edge.

Roll the Sushi
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling the sushi away from you, tucking in the fillings as you go. Roll tightly but not too tight, and seal the edge with a bit of water.

Using a sharp knife, cut the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.
