Method

Noodles Preparation

    Boil Water

    Bring 1 litre of water to a boil in a large pot.

    Cook Noodles

    Add 200g of Korean wheat noodles to the boiling water and cook according to package instructions (usually 5-6 minutes) until al dente.

    Drain and Rinse Noodles

    Drain the noodles and rinse under cold water to stop the cooking process. Set aside.

Stir-fry Preparation

    Make Stir-fry Sauce

    In a small bowl, mix together soy sauce, sesame oil, gochujang, sugar, and minced garlic to create the stir-fry sauce.

    Heat Sauce

    Heat a large skillet or wok over medium-high heat. Add the stir-fry sauce and let it simmer for 1 minute.

    Stir-fry Vegetables

    Add sliced bell pepper, julienned carrot, and zucchini to the skillet. Stir-fry for about 3-4 minutes until vegetables are tender but still crisp.

    Combine Noodles and Vegetables

    Add the cooked noodles to the skillet with the vegetables and stir well to combine, cooking for an additional 2-3 minutes.

    Garnish

    Garnish with chopped green onions before serving.

Nori's Yakitori Chicken Preparation

    Make Marinade

    In a bowl, combine soy sauce, mirin, sake, brown sugar, minced garlic, and minced ginger to create the marinade.

    Marinate Chicken

    Add the chicken thighs to the marinade, cover, and let it marinate for at least 30 minutes (or up to overnight in the refrigerator).

    Preheat Grill

    Preheat a grill or grill pan over medium heat. Remove chicken from marinade and discard the leftover marinade.

    Grill Chicken

    Grill the chicken for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

    Rest and Garnish Chicken

    Once cooked, remove from grill and let it rest for a few minutes. Sprinkle sesame seeds on top before slicing into pieces.
