    Prepare the Ingredients

    Start by chopping the onion, carrots, celery, and potatoes into bite-sized pieces. Mince the garlic and set aside.

    Brown the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed beef, seasoning with salt and black pepper. Brown the beef on all sides for about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for about 2-3 minutes.

    Add the Broth and Seasonings

    Add the beef broth, diced potatoes, bay leaves, and thyme to the pot. Bring to a boil.

    Simmer the Stew

    Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the beef is tender and the flavors meld. Stir occasionally.
