Beef Curry

    Sauté Aromatics

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes. Add the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.

    Add Spices and Beef

    Stir in the curry powder, salt, and black pepper. Add the beef cubes and cook until they are browned on all sides, about 5-7 minutes.

    Simmer the Curry

    Add the tomato paste, coconut milk, and beef broth to the pot. Bring to a boil, then reduce the heat to low. Cover and let simmer for about 1.5 hours or until the beef is tender, stirring occasionally.

    Finish and Serve

    Once the beef is tender, taste and adjust seasoning if necessary. Garnish with chopped cilantro before serving.

Rice

    Cook the Rice

    In a medium saucepan, combine the long-grain rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes, or until the rice is cooked and water is absorbed. Fluff with a fork before serving.

Green Salad

    Prepare the Salad

    In a large bowl, combine the mixed greens, sliced cucumber, and cherry tomatoes. Drizzle with olive oil and lemon juice. Season with salt and black pepper to taste. Toss gently to combine.
