Potatoes

Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to make fries, approximately 1/4 inch thick.

  2. 2

    Soak the Potatoes

Place the cut fries in a bowl of cold water. Soak for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

Cooking

  1. 3

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil temperature by dropping a small piece of potato into it; if it sizzles, it’s ready.

  2. 4

    Dry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture. This is important to avoid splattering when frying.

  3. 5

    Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove the fries and let them drain on paper towels.

  4. 6

    Season the Fries

While the fries are still hot, sprinkle them with garlic powder, salt, and black pepper. Toss them gently to ensure even coating.

  5. 7

    Add Parmesan and Parsley

Immediately sprinkle the grated Parmesan cheese over the hot fries and toss again. Finish by adding the chopped fresh parsley for garnish.
