    Prepare the Ingredients

    Wash the eggplants and slice them into thin rounds. Chop the onion and garlic finely. If using a whole red chili pepper, slice it in half lengthwise and remove the seeds if you prefer less heat.

    Heat the Oil

    In a large frying pan or wok, heat the vegetable oil over medium-high heat until shimmering.

    Sauté Onion and Garlic

    Add the chopped onion and garlic to the hot oil. Stir-fry for about 2-3 minutes or until the onion becomes translucent.

    Add Eggplant

    Add the sliced eggplant to the pan. Stir well to coat with the oil and cook for about 5-7 minutes, stirring occasionally, until the eggplant is tender.

    Season the Dish

    Add the soy sauce, sugar, salt, and black pepper (to taste) to the pan. Stir well to combine all the ingredients.

    Add Thai Basil and Chili

    Add the fresh Thai basil and the sliced red chili pepper to the pan. Stir-fry for another 2-3 minutes until the basil wilts.

    Serve

    Remove the pan from heat and transfer the Basil Eggplant to a serving dish. Enjoy hot with rice or as a side dish!
