Filling Preparation

    Prepare the Filling

    In a food processor, add the walnuts and pulse until they are coarsely chopped. In a medium bowl, mix the chopped walnuts, sugar, and ground cinnamon until well combined.

    Melt the Butter

    In a small saucepan, melt the butter over low heat. Once melted, remove from heat and let it cool slightly.

Baklava Assembly

    Prepare the Phyllo Dough

    Preheat the oven to 350°F (175°C). Unroll the phyllo dough and cover it with a damp kitchen towel to prevent it from drying out. Grease a 9x13 inch baking dish with melted butter.

    Layer the Phyllo

    Place one sheet of phyllo dough in the prepared baking dish. Brush the sheet with melted butter. Repeat this process, layering and buttering 8 sheets of phyllo dough.

    Add the Filling

    Sprinkle a portion of the walnut filling evenly over the layered phyllo. Repeat the process of layering 4 sheets of buttered phyllo, followed by more walnut filling until all the filling is used, finishing with a top layer of 8 sheets of buttered phyllo.

    Cut the Baklava

    Using a sharp knife, carefully cut the baklava into diamond or square shapes, cutting through all layers.

    Bake

    Bake the baklava in the preheated oven for 45-50 minutes, or until the top is golden brown and crisp.

Syrup Preparation

    Make the Syrup

    In a small saucepan, combine the water, sugar, honey, and vanilla extract. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves. Once boiling, reduce the heat and let it simmer for about 10 minutes. Remove from heat and let it cool.

    Pour the Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to absorb the syrup and cool completely.
