Method
Preparing the Rice

Rinse the Rice
In a fine mesh strainer, rinse 2 cups of rice under cold water until the water runs clear to remove excess starch.

Marinating & Baking Chicken Thighs

Prepare the Marinade
In a mixing bowl, combine 3 tbsp soy sauce, 2 tbsp honey, 3 minced garlic cloves, 1 tsp grated ginger, 1 tbsp sesame oil, and 1 tsp black pepper. Mix well.

Marinate the Chicken
Place 2 chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1-2 hours.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Bake the Chicken
Remove the chicken from the marinade and place it in a baking dish. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

Garnish the Chicken
Once baked, sprinkle chopped green onions and sesame seeds over the chicken before serving.
Making Potato Mac Salad

Mix the Salad Ingredients
In a large bowl, combine the cooled potatoes, 1 cup mayonnaise, 1 cup diced celery, 1 cup grated carrots, 1 tsp salt, 0.5 tsp black pepper, and 2 chopped green onions. Mix until well combined.

Chill the Salad
Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
