Baked Korean Chicken Thighs Recipe

Method

Preparing the Rice

    Rinse the Rice

    In a fine mesh strainer, rinse 2 cups of rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium pot, combine the rinsed rice with 4 cups of water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes until rice is cooked. Fluff with a fork and set aside.

Marinating & Baking Chicken Thighs

    Prepare the Marinade

    In a mixing bowl, combine 3 tbsp soy sauce, 2 tbsp honey, 3 minced garlic cloves, 1 tsp grated ginger, 1 tbsp sesame oil, and 1 tsp black pepper. Mix well.

    Marinate the Chicken

    Place 2 chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1-2 hours.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Bake the Chicken

    Remove the chicken from the marinade and place it in a baking dish. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

    Garnish the Chicken

    Once baked, sprinkle chopped green onions and sesame seeds over the chicken before serving.

Making Potato Mac Salad

    Prepare the Potatoes

    In a large pot, bring salted water to a boil. Add 2 cups of diced potatoes and cook for 10-15 minutes until tender. Drain and let cool.

    Mix the Salad Ingredients

    In a large bowl, combine the cooled potatoes, 1 cup mayonnaise, 1 cup diced celery, 1 cup grated carrots, 1 tsp salt, 0.5 tsp black pepper, and 2 chopped green onions. Mix until well combined.

    Chill the Salad

    Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
