    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Once done, remove them from the skillet and place them on a paper towel to drain excess grease. Chop the bacon into smaller pieces.

    Cook the Ground Beef

    In the same skillet, drain some of the bacon fat, leaving about 1 tablespoon for flavor. Add the ground beef to the skillet and cook until browned, about 5-7 minutes, breaking it apart with a spatula. Season with salt, black pepper, and garlic powder. Drain excess grease and set aside.

    Prepare the Vegetables

    Chop the onion and dice the tomato into small cubes. Set aside.

    Beat the Eggs

    In a bowl, crack the eggs and whisk them until well combined. Season with a pinch of salt and pepper.

    Cook the Omelet

    In the same skillet, reduce the heat to low. Pour the beaten eggs into the skillet, tilting it to spread the eggs evenly. Allow the eggs to cook for about 2-3 minutes until the edges begin to set.

    Add Filling

    As the omelet sets, evenly distribute the cooked ground beef, bacon pieces, diced tomatoes, and chopped onions over one half of the omelet. Sprinkle the cheddar jack cheese on top of the filling.

    Fold and Finish Cooking

    Once the cheese starts to melt and the eggs are mostly set, carefully fold the omelet in half using a spatula. Cook for another 1-2 minutes to ensure the center is cooked through.

    Serve
