Sushi Rice Preparation

    Rinse the rice

    Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear, about 2-3 minutes.

    Cook the rice

    In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.

    Season the rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Temaki Assembly

    Prepare the avocado

    Slice the ripe avocado in half and remove the pit. Scoop out the flesh and cut it into thin slices.

    Prepare the nori

    Take a nori sheet and place it shiny side down on a clean surface.

    Assemble the temaki

    Wet your hands slightly with water to prevent sticking. Take a small handful of sushi rice and spread it onto the left side of the nori sheet, leaving space at the bottom. Top the rice with avocado slices, then sprinkle with sesame seeds.

    Roll the temaki

    Starting from the bottom, roll the nori up and over the filling to form a cone shape. Seal the edge with a little water if needed.

    Serve

    Serve the temaki with a small dish of soy sauce for dipping.
