Preparing Sushi Rice

Rinse the Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice
Transfer the rinsed rice to a rice cooker and add 1.25 cups of water. Cook according to the rice cooker instructions.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while the rice is still warm. Allow it to cool.

Lay out Nori
Place a bamboo sushi mat on a clean surface and lay a sheet of nori, shiny side down, on the mat.

Spread Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top.

Roll the Maki
Using the bamboo mat, gently lift the edge of the mat closest to you and begin to roll the sushi away from you, applying gentle pressure to form a tight roll. Continue rolling until you reach the exposed edge of the nori.

Seal the Roll
Wet the edge of the nori with a little water to seal the roll. Use a sharp knife to cut the roll into 6-8 pieces.

Arrange the sliced maki on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
