Meat

Method

Preparation

  1. 1

    Slice the Meat

Thinly slice the beef and pork against the grain to ensure tenderness.

  2. 2

    Prepare Marinade

In a large mixing bowl, combine soy sauce, Worcestershire sauce, garlic powder, minced garlic, black pepper, smoked paprika, red pepper flakes, honey, and liquid smoke. Mix well until honey is dissolved.

Marinating

  1. 3

    Marinate the Meat

Add the sliced beef and pork to the marinade. Ensure all pieces are well-coated. Cover and refrigerate for at least 6 hours or overnight for best flavor.

Drying

  1. 4

    Preheat Dehydrator

Preheat your food dehydrator to 160°F (70°C). If using an oven, preheat it to the lowest setting, ideally around 160°F.

  2. 5

    Arrange Meat for Drying

Remove meat from marinade and pat dry with paper towels. Arrange the pieces in a single layer on the dehydrator trays or a baking sheet lined with parchment paper.

  3. 6

    Dehydrate the Meat

Dehydrate the meat for 6-8 hours, checking periodically until the jerky is dry but still slightly pliable. If using an oven, it may take 4-6 hours.

Storing

  1. 7

    Cool and Store

Once dried, let the jerky cool completely. Store in an airtight container at room temperature for up to 1 month or in the freezer for longer shelf life.
