Prepare Sushi Rice

Rinse Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.

Cook Sushi Rice
Combine rinsed sushi rice and 1.25 cups of water in a rice cooker. Cook according to the rice cooker's instructions, or bring to a boil in a pot, then reduce heat, cover, and simmer for 18 minutes.

Season Sushi Rice
In a small bowl, mix together 2 tbsp rice vinegar, 1 tsp sugar, and 0.5 tsp salt until dissolved. Once rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let cool to room temperature.
Prepare Ahi Sashimi

Slice Ahi Tuna
Using a sharp knife, slice the 200 grams of sashimi-grade Ahi tuna into thin pieces, about 1/4 inch thick.

Assemble Nigiri
Wet your hands with water to prevent sticking. Take a small amount of seasoned sushi rice (about 2 tablespoons) and mold it into an oval shape. Place a slice of Ahi tuna on top of the rice and gently press to adhere.

Repeat the process until you have formed 2 pieces of Ahi nigiri.
Serve

Plate and Garnish
Place the Ahi nigiri on a serving plate. Drizzle with soy sauce, add a dollop of wasabi, and serve with pickled ginger on the side. Sprinkle sesame seeds and microgreens or chives over the top for garnish.
