Prepare Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. If cooking on the stovetop, bring to a boil, then cover and reduce heat to low, cooking for 18-20 minutes.

Season the Rice
Once cooked, transfer the rice to a large bowl. In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until the sugar dissolves. Pour this mixture over the rice and gently fold it in with a spatula. Allow the rice to cool to room temperature.
Prepare Ahi Poke Filling

Dice Ahi Tuna
Cut the ahi tuna into small cubes (about 1/2 inch).

Mix Seasoning
In a bowl, combine the diced tuna, soy sauce, sesame oil, chopped green onions, sesame seeds, and chili flakes. Mix well to evenly coat the tuna. Let it marinate for about 10 minutes.
Assemble Temaki

Prepare Nori Sheet
Lay the nori sheet on a clean, dry surface with the shiny side down.

Add Rice and Filling
Moisten your hands with water to prevent sticking. Take a handful of sushi rice (about 1/4 cup) and place it on the bottom left corner of the nori sheet. Press it down gently. Then, add a portion of the poke filling on top of the rice.

Add Garnish
Place a slice of avocado on top of the poke filling. Optionally, you can add pickled ginger and wasabi on the side.

Roll the Temaki
Starting from the bottom left corner, roll the nori sheet up and over the filling, forming a cone shape. Use your hands to hold it together. Serve immediately.
