Prepare the Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh strainer and rinse it under cold water until the water runs clear, to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. Then, gently fold the vinegar mixture into the rice and let it cool to room temperature.

Prepare the Ahi Poke

    Dice the Ahi Tuna

    Using a sharp knife, cut the sashimi-grade Ahi tuna into small cubes (about 1/2 inch).

    Mix the Ahi Poke Ingredients

    In a bowl, combine the diced Ahi tuna, soy sauce, sesame oil, green onions, and diced avocado. Gently mix until well combined.

Assemble the Nigiri

    Shape the Rice

    Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about 2-3 tablespoons) and mold it into an oval shape, about 2 inches long.

    Top with Ahi Poke

    Place a spoonful of the Ahi poke mixture on top of each rice oval. Sprinkle sesame seeds over the top and garnish with strips of seaweed.
