Preparing the Rice

    Rinse and Cook the Rice

    Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.25 cups of water in a rice cooker. Cook according to the rice cooker's instructions. Alternatively, you can cook it in a pot on the stove by bringing the water to a boil, then covering and simmering on low heat for about 18 minutes.

    Season the Rice

    Once the rice is cooked, transfer it to a large bowl. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Pour the mixture over the rice and gently fold to combine. Allow the rice to cool to room temperature.

Preparing the Ahi Topping

    Prepare the Ahi Tuna

    While the rice is cooling, cut the Ahi tuna into bite-sized cubes. In a mixing bowl, combine the soy sauce, sesame oil, and sliced green onions. Add the cubed tuna to the bowl and gently mix to coat the tuna evenly with the marinade.

    Add Garnishes

    Prepare the garnishes by cutting the nori sheets into strips, and slicing the cucumber and radishes thinly. Set aside.

Assembling the Ahi-Donburi

    Assemble the Bowl

    In a serving bowl, place a generous scoop of the seasoned sushi rice as the base. Top with the marinated Ahi tuna, followed by the cucumber, radishes, and nori strips. Drizzle with additional soy sauce if desired.

    Garnish your Ahi-Donburi with sesame seeds, pickled ginger, and a dollop of wasabi, if using. Serve immediately and enjoy!
