Method
Prepare Tempura Batter

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt.

Add Ice Water
Slowly add the ice water to the dry ingredients, whisking gently until just combined. The batter should be slightly lumpy.

Rest the Batter
Let the batter sit for about 10 minutes while you prepare the Ahi fish.
Prepare Ahi Fish

Cut Ahi Tuna
Cut the fresh Ahi tuna into bite-sized pieces, about 1 inch thick.

Heat Oil
Heat the vegetable oil in a deep pot or fryer over medium-high heat until it reaches 350°F (175°C).
Fry Ahi

Batter Ahi
Dunk each piece of Ahi tuna into the tempura batter, ensuring it is fully coated.

Carefully drop the battered Ahi pieces into the hot oil, a few at a time, and fry until golden brown, about 2-3 minutes.

Remove the fried Ahi with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Make Miyos Special Ahi Don Sauce

Mix Sauce Ingredients
In a small bowl, combine the soy sauce, mirin, sesame oil, rice vinegar, and finely chopped green onions.

Whisk the ingredients together until well combined. Adjust seasoning to taste if necessary.

Arrange the fried Ahi on a serving plate and drizzle with Miyos special Ahi Don sauce.
