Preparation of Fries

    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick fries.

    Soak the Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Dry the Fries

    Drain the fries and pat them dry using a clean kitchen towel.

Frying the Fries

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried fries in batches to avoid overcrowding. Fry for about 5-7 minutes or until golden brown.

    Remove the fries from the oil and drain them on paper towels. Season with salt immediately.

Making the Adobo Sauce

    In a saucepan, combine minced garlic, soy sauce, vinegar, oregano, black pepper, bay leaves, and water.
