Preparation of Adobo Aioli

Make the Aioli
In a small mixing bowl, combine mayonnaise, adobo sauce, minced garlic, lemon juice, salt, and black pepper. Whisk together until smooth and well combined.
Cooking the Sausage

Cook the Portuguese Sausage
In a skillet over medium heat, cook the Portuguese sausage links for about 5-7 minutes, turning occasionally until heated through and slightly crispy on the outside.
Assembling the Adobo Dog

Prepare the Buns
While the sausage is cooking, slice the Punaluu sweet buns in half lengthwise, being careful not to cut all the way through.

Add the Sausage and Toppings
Once the sausage is cooked, place one sausage link inside each bun. Top each dog with shredded adobo pork, diced tomatoes, sliced onions, a generous drizzle of the adobo aioli, and sprinkle with crispy garlic.
