Prepare the Dough
In a large mixing bowl, combine bread flour, water, salt, and active dry yeast. Mix until a shaggy dough forms. Cover and let it rest for 30 minutes.

Knead the Dough
After resting, knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let it rise for 2-3 hours, or until doubled in size.

Preheat the Oven
Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

Shape the Pizza
Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into two equal portions. Shape each portion into a pizza crust by stretching it with your hands or using a rolling pin.

Add Sauce and Toppings
Spread 1/2 cup of tomato sauce on each crust, then sprinkle with mozzarella and pecorino cheese. Top with caramelized onions, roasted bell peppers, and salumi.

Bake the Pizza
Carefully transfer the pizza onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly.

Remove the pizza from the oven, let it cool for a couple of minutes, then slice and serve hot.
