    Prepare the Fritter Mixture

    In a large bowl, mix together the shredded cheddar cheese, softened cream cheese, diced pimentos, cornmeal, flour, eggs, baking powder, salt, and black pepper until well combined.

    Form the Fritters

    Scoop tablespoon-sized portions of the mixture and form them into small balls. Place them on a baking sheet lined with parchment paper.

    Fry the Fritters

    In a deep pan, heat the vegetable oil over medium heat. Once hot, carefully add the fritters in batches, frying until golden brown on all sides, about 3-4 minutes. Drain on paper towels.

    Make the Aioli

    In a bowl, whisk together mayonnaise, diced banana peppers, minced garlic, lemon juice, and salt until smooth. Adjust seasoning as needed.

Charred Tomato Coulis

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Toss the halved tomatoes with olive oil, salt, and black pepper, and spread them on a baking sheet. Roast for 20-25 minutes until blistered and tender.

    Blend the Coulis

    Once roasted, transfer the tomatoes to a blender, add chopped fresh herbs, and blend until smooth. Adjust seasoning if necessary.

    In a skillet, heat olive oil over medium-high heat. Add the trimmed green beans and sauté until they are blistered and tender, about 5-7 minutes. Season with salt and lemon zest.
