For the Cast Iron Shoulder Tender

    Prepare the Meat

    Preheat your oven to 375°F (190°C). Rub the shoulder tender with olive oil, salt, pepper, garlic powder, onion powder, and fresh thyme.

    Sear the Meat

    Heat a cast iron skillet over medium-high heat. Sear the shoulder tender for about 3-4 minutes on each side until browned.

    Roast the Meat

    Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

For the Pizza Salsa Verde

    Blend the Ingredients

    In a food processor, combine the basil, parsley, garlic, capers, olive oil, lemon juice, and salt. Blend until smooth. Adjust seasoning if necessary.

For the Honey Carrot Purée

    Cook the Carrots

    Peel and chop the carrots. Boil them in salted water until tender, about 15-20 minutes.

    Blend the Purée

    Drain the carrots and transfer them to a blender. Add honey, butter, salt, and pepper. Blend until smooth and creamy.
