Directions

  1. 1

    Prepare the Tomatoes

In a large bowl, combine the heirloom tomatoes, salt, black pepper, 2 tablespoons of olive oil, and red wine vinegar. Toss gently to coat and let marinate for at least 15 minutes.

  2. 2

    Toast the Baguette

Preheat the oven to 400°F (200°C). Spread the baguette cubes on a baking sheet and drizzle with 2 tablespoons of olive oil. Toss to coat and bake for 10-15 minutes until golden and crispy.

  3. 3

    Combine Ingredients

Once the tomatoes have marinated and the baguette is toasted, add the toasted baguette cubes to the bowl with the tomatoes. Add the fresh basil and parsley, and gently toss to combine.

  4. 4

    Serve

Transfer the panzanella to a serving platter. Tear the burrata into pieces and place on top of the salad. Drizzle with additional olive oil if desired, and serve immediately.
