Preparation

Preparation of Cream Mixture

1. Separate the Eggs

In a mixing bowl, carefully separate the egg whites from the yolks. Place the yolks in a large bowl and the whites in another.

2. Make the Mascarpone Mixture

Add the granulated sugar and vanilla extract to the egg yolks. Whisk together until the mixture is pale and fluffy. Then fold in the mascarpone cheese until smooth.

3. Whip the Heavy Cream

In a separate bowl, use an electric mixer to whip the heavy cream until stiff peaks form.

4. Combine Mixtures

Gently fold the whipped cream into the mascarpone mixture until fully incorporated. Be careful not to deflate the cream.

5. Whip the Egg Whites

Whip the egg whites until they form stiff peaks. Carefully fold the egg whites into the mascarpone and cream mixture.

Coffee Mixture Preparation

6. Prepare the Coffee Mixture

In a shallow dish, combine the brewed coffee and coffee liqueur. Allow to cool slightly.

Layering and Assembly

7. Dip Ladyfingers

Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

8. Layer the Ingredients

In a rectangular dish, start by placing a layer of dipped ladyfingers at the bottom. Spread half of the mascarpone cream mixture over the ladyfingers.

9. Repeat Layers

Add another layer of dipped ladyfingers followed by the remaining mascarpone cream mixture.

10. Chill and Serve

Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder.
