Method

Cooking Pasta

    Boil Water

    Bring a large pot of salted water to a boil over high heat.

    Cook Pasta

    Add the pasta to the boiling water and cook according to the package instructions until al dente. This usually takes about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta and set aside, reserving about 1/2 cup of the pasta water.

Preparing Vegetables

    Chop Vegetables

    While the pasta is cooking, chop the bell pepper, zucchini, carrot, and broccoli into bite-sized pieces.

    Prepare Spinach

    Rinse the spinach and set aside.

Making the Sauce

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat.

    Sauté Garlic

    Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.

    Add Vegetables

    Add the chopped vegetables (bell pepper, zucchini, carrot, broccoli, and cherry tomatoes) to the skillet and sauté for 5-7 minutes until they are tender but still crisp.

    Add Spinach

    Stir in the spinach and cook until wilted, about 1-2 minutes.

    Add Broth and Seasonings

    Pour in the vegetable broth, lemon juice, salt, and black pepper. Stir to combine and simmer for 2-3 minutes.

Combining Pasta and Sauce

    Combine

    Add the cooked pasta to the skillet and toss to coat with the sauce. If the mixture is too dry, add some reserved pasta water to achieve the desired consistency.

    Add Cheese

    Stir in the grated Parmesan cheese until melted and well combined.

Serving

    Plate and Garnish

    Serve the pasta primavera warm, garnished with fresh basil leaves on top.
